Carolina Fish Cakes

January 12, 2020 //  by Sheila Schwartz

There was not a shrimp to be found in the kitchen today. Salmon cakes would not do for I perfected my favorite recipe grounded upon my Appalachian roots. I want low country flavors! And I have skipjack tuna in a can….

Campground review of RVacation in Selma, NC

January 11, 2020 //  by Sheila Schwartz

Some states have great rest stops for catching a few zzzz’s. I discovered on my December sabbatical trip that NC is not one of them when towing. I was grateful to find a campground just off the highway…but was it worth the cost?

A widow removes her rings

August 21, 2018 //  by Sheila Schwartz

When is it time for a widow to remove her wedding rings?  The answer is whenever, if ever.  I knew in June after returning from Mount St Helens that I would no longer wear my wedding rings.  I took them off and set them in the velvet lined drawer next my Beloved’s ring.

Though my finger is not bare.   …

Pie Weights and Reckless Love

August 18, 2018 //  by Sheila Schwartz

A good cup of coffee and savory breakfast complements my morning musing with God. The song ‘Reckless Love‘ is playing over and over in my mind. I allow God to take those words and work in me His morning devotion. I reflect on the moments spent with Maggie in the kitchen and am drawn to our conversation of pie weights. Pie weights are used to keep an unfilled pie crust from puffing up and shrinking away from the sides of the pan. How do pie weights muse with reckless love? …

Breakfast Sausage Pie

August 18, 2018 //  by Sheila Schwartz

During a quick trip to my local grocer, I bought some fresh made sausage. It was a coarse grind, more chopped than ground meat and I have been mulling over a few possible savory dishes. All for naught as I woke up this morning wanting sausage gravy! I am adding additional spices to the browning meat when Maggie asks if I have made biscuits. Never thought about them – how could that be? Who has sausage gravy without biscuits? …

So long status quo

June 14, 2018 //  by Sheila Schwartz

I initially entered the field of Emergency Services because around the age of 11, I was told I would be too short to lift anyone into an ambulance.  Really? …

Three Bean Salad

June 14, 2018 //  by Sheila Schwartz

After handing the RV back over to Cindy, I returned to Baltimore to spend a couple days with my mom.  Plus I had dumped all our stuff from the RV onto my sisters dining room floor.  (Thanks Big Sister!)  Wanting to use up some of the groceries, I pulled out three cans of beans…black beans, cannellini beans, and garbanzo beans.  What do I do with that?!?

Our first stay in a city owned RV park

June 2, 2018 //  by Sheila Schwartz

I  was looking for a RV park along the ocean near one of the redwood state parks.  According to the RV Parky app, Shoreline RV Park fit the criteria.   This was our first stay in a city/county park as this RV park is managed by the local government (http://crescentcity.org/)
